Students of Abhilashi University Innovate with Chutney & Squash
Mandi, Himachal Pradesh, March 19 – Students from the School of Agriculture, Abhilashi University, under the guidance of Dr. Manish Chauhan (Assistant Professor, Vegetable Science), have developed chutney and squash from Himalayan Rhododendron (Buransh) flowers using scientific methods. This innovation aims to highlight the medicinal benefits of Buransh and create new commercial opportunities for local farmers.
University Chancellor Dr. R.K. Abhilashi, Pro-Chancellor Dr. L.K. Abhilashi, Vice-Chancellor Prof. H.K. Chaudhary, and other dignitaries lauded the students’ efforts. Prof. Chaudhary emphasized that Buransh flowers are rich in antioxidants, vitamin C, and anti-inflammatory compounds, which help in regulating blood pressure, improving heart health, and enhancing immunity. Additionally, they aid digestion and detoxification.
He further stated that Buransh squash helps control nosebleeds (epistaxis) and provides a cooling effect on the body. He stressed the need to conserve Himalayan biodiversity and encouraged students to explore commercial applications of natural resources for economic growth.
Dean of the School of Agriculture, Dr. P.C. Sharma, praised the initiative, highlighting its potential to boost local agricultural economies. The university administration, including Registrar Dr. Kapil Kapoor, Genius Education Society Chairperson Dr. Narvada Abhilashi, and Vice-Chairperson Dr. Promila Abhilashi, extended their congratulations to the faculty and students for their commendable efforts.
